Hi!  I’m Rita and I’m thrilled to be starting this new endeavour and sharing it with all of you.

A little about myself….

I’m a married mom of two beautiful girls.  Hard to believe I’ve lived in LaSalle for over half my life now but it’s true!  Before the big move to “LA”, I lived in Windsor so I’m born and bred right here in Essex County.

How did I get into baking?  Well, I’ve always loved creating things in the kitchen—it’s my happy place! As an example, a group of friends regularly gather in my kitchen while our kids have yoga class and I always make sure to prepare something special for my guests. I got this from my mom, who always treats her friends like family, going all out, even for a 20-minute coffee visit.  I would sometimes ask why she goes to so much trouble and her answer was “I like them and I want them to come back.”  They would come back regardless – my mom is a hoot.  But I get what she means now.   People want something to look forward to.  And my Sunday morning crew love coming over, and while part of me likes to think it’s because of my charm, I know they really love my cookies.

To say I’m self-taught would be a huge disservice to my mom.  While my mom and I bake completely different types of goods – she more traditional and I more modern – she’s the one who instilled the love of the process.  I always wanted to help my mom growing up and she would say “just watch, you will learn.”

I watched for decades.  She didn’t let me crack my first egg for her until I was in my thirties.  To this day, she doesn’t like anyone getting in her way in the kitchen. But she was right.  I did learn.  Watching her over the years, while it irritated me at times, allowed me to appreciate the art and the science of creating something special.  It taught me patience…for baking…not for anything else…

My girls have shown an interest in baking but they’re still young, so I just let them watch.  And I hope that by watching, they too will learn and love the art of creating.

In the meantime, I bake for all of you.  Go on – take a bite!

  The baking space for lasalle cookie co is approved by the Windsor Essex County Health Unit, registered as an official business in Ontario and I even (gasp…) pay taxes.
